Ingredients

  • 1 pound dried navy beans
  • 6 cups water
  • 1 onion, chopped
  • 1/2 cup molasses
  • 1/4 cup brown sugar

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 4 slices bacon, cooked and crumbled

Directions

  1. Rinse the navy beans under cold water and remove any debris or stones. Place the beans in a large pot and cover with water. Bring to a boil and cook for 2 minutes. Remove from heat, cover, and let the beans soak for 1 hour.
  2. After soaking, drain the beans and rinse them again.
  3. In a large Dutch oven or oven-safe pot, cook the chopped onion over medium heat until it becomes translucent.
  4. Add the soaked and drained navy beans, molasses, brown sugar, mustard, salt, black pepper, and paprika to the pot. Stir well to combine.
  5. Add enough water to cover the beans by about an inch. Bring the mixture to a boil over medium heat.
  6. Preheat the oven to 350°F (175°C).
  7. Cover the pot with a lid and transfer it to the preheated oven. Bake for 2 hours, or until the beans are tender and the sauce has thickened. Stir the beans occasionally while baking.
