This Moroccan Chicken Tagine is a traditional North African dish that is full of flavor and warmth. The chicken is slow-cooked in a fragrant blend of spices like cinnamon, cumin, and paprika, along with onions, preserved lemons, and green olives. Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- 1 tsp ground ginger
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/4 tsp ground turmeric
- 1 cup chicken broth
- 1/4 cup green olives
- 1/4 cup chopped preserved lemon
- Salt and pepper to taste
- Couscous for serving
Directions
- In a large tagine or Dutch oven, heat some olive oil over medium heat.
- Season the chicken thighs with salt and pepper, then sear them in the tagine until browned on both sides. Remove and set aside.
- In the same tagine, add the sliced onion, garlic, and spices. Cook until aromatic, about 2 minutes.
- Pour in the chicken broth and return the chicken thighs to the pot. Bring to a simmer, then cover and cook on low heat for 1 hour, until the chicken is tender.
- Stir in the green olives and preserved lemon, and cook for another 10 minutes.
- Adjust seasoning with salt and pepper if needed.
