- Line a 9x9-inch baking dish with parchment paper, leaving an overhang on two sides for easy removal later.
- In a large saucepan, melt the butter over medium heat. Add the heavy cream and sugar, stirring until the sugar has dissolved completely.
- Attach a candy thermometer to the side of the saucepan and bring the mixture to a boil. Cook, stirring frequently, until the temperature reaches 238°F (soft-ball stage). This will take about 10-15 minutes.
- Remove the saucepan from heat and stir in the vanilla extract.
