This delightful homemade apricot jam is infused with the refreshing taste of lemon balm. It is the perfect balance of slightly tangy and sweet, making it a versatile condiment for both sweet and savory dishes. This recipe is simple to make and requires only a few ingredients. Enjoy it on toast, scones, or even as a glaze for roasted meats. Make a batch of this apricot jam and savor the taste of summer all year round.

Ingredients

  • 1 kg fresh apricots, pitted and chopped
  • 700 grams granulated sugar
  • Juice of 1 lemon
  • 2-3 sprigs of fresh lemon balm

Directions

  1. In a large saucepan, combine the chopped apricots and granulated sugar. Let it sit for about 30 minutes to macerate.
  2. Place the saucepan over medium heat and bring the mixture to a boil. Stir continuously to prevent burning.
  3. Reduce the heat to medium-low and simmer for about 20-25 minutes until the apricots are soft and the mixture has thickened.
  4. Remove from heat and stir in the lemon juice.
  5. Using a fork, lightly bruise the lemon balm sprigs to release the flavors, then add them to the jam.
  6. Allow the jam to cool completely. Remove the lemon balm sprigs before transferring the jam to sterilized jars.
  7. Seal the jars tightly and store in a cool, dark place. The jam will keep for up to a year.
  8. Enjoy your homemade apricot jam with lemon balm on toast, muffins, or any other way you like!
