Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1/4 cup unsweetened cocoa powder

  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 cup buttermilk
  • 1 teaspoon white vinegar
  • 1/2 teaspoon xanthan gum (if your gluten-free flour blend doesn't contain it)
  • Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the gluten-free flour, cocoa powder, baking powder, baking soda, salt, and xanthan gum (if needed). Set aside.
  3. In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and red food coloring.
  4. Gradually add the dry flour mixture to the butter mixture, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined. Stir in the white vinegar.
  5. Divide the batter evenly between the prepared cake pans. Smooth the surfaces with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. Meanwhile, prepare the cream cheese frosting. In a large mixing bowl, beat the softened cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract, beating on low speed until well combined. Increase the speed to medium-high and continue to beat until light and fluffy.
  9. Once the cakes have cooled completely, place one cake layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second cake layer on top of the frosting and frost the sides and top of the cake with the remaining cream cheese frosting.
