Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda

  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz semisweet chocolate, chopped
  • 1/4 cup butter, softened
  • 1/4 cup strong brewed coffee

Directions

  1. Preheat the oven to 350°F and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla extract, and mix until well combined. Stir in the boiling water.
  3. Divide the batter evenly between the cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  4. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside.
  5. Melt the chocolate, butter, and coffee together in a heatproof bowl set over a pot of simmering water. Stir until smooth, then let cool to room temperature.
  6. Gently fold the whipped cream into the chocolate mixture until well combined. Refrigerate the mousse for 1-2 hours, or until set.
  7. Place one cake layer on a serving plate and spread a layer of mousse on top. Place the second cake layer on top and cover the entire cake with the remaining mousse. Refrigerate for at least 4 hours before serving.
