Ingredients

  • For the crust:

Directions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the sugar and cocoa powder, and mix until well combined.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and sour cream.
  5. Pour the filling over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 1 hour or until the center is set and the top is slightly puffed. Remove from the oven and let cool for 10 minutes.
  7. While the cake is cooling, prepare the ganache. In a saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat and add the chopped semisweet chocolate. Let it sit for a minute, then whisk until smooth and glossy.
  8. Pour the ganache over the cooled cake, spreading it evenly with a spatula.
  9. Refrigerate the cake for at least 4 hours or overnight to set.
  10. Before serving, remove the sides of the springform pan and garnish the cake with chocolate shavings.
