  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 cups beef broth
  • 1/4 cup masa harina or cornmeal (optional, for thickening)
  • Toppings: shredded cheese, sour cream, chopped green onions, chopped cilantro, diced avocado, tortilla chips

Directions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.

  3. Stir in the diced tomatoes, kidney beans, tomato paste, chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if using).
  4. Pour in the beef broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
  5. If desired, mix in the masa harina or cornmeal to thicken the chili. Cook for an additional 15 minutes.
