Ingredients
- 2 cups romaine lettuce, chopped
- 1 cup fresh parsley, chopped
- 1 cup fresh mint leaves, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 cup radishes, thinly sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup green bell pepper, diced
- 1/4 cup kalamata olives, pitted
- 1/4 cup feta cheese, crumbled
- 2 pita bread rounds
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1 teaspoon sumac
- Juice of 1 lemon
- Salt and pepper to taste
Directions
- Preheat the oven to 350°F (175°C).
- Cut the pita bread into bite-sized pieces and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Bake for about 10 minutes or until the pita bread is crispy and golden.
- In a large bowl, combine the romaine lettuce, parsley, mint leaves, cherry tomatoes, cucumber, radishes, red onion, green bell pepper, kalamata olives, and feta cheese.
- In a small bowl, mix together the minced garlic, sumac, lemon juice, remaining tablespoon of olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine all the ingredients.
- Add the toasted pita bread to the salad and give it a final toss.
- Serve the Fattoush salad immediately and enjoy!
