Ingredients

  • 1 lb. boneless, skinless chicken breasts, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 1 tablespoon ginger, minced
  • 3 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 cup coconut milk
  • 1/4 cup water

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onion and sauté until softened, about 3 minutes.
  3. Add the ginger and garlic and sauté for another minute.
  4. Add the curry powder, cumin, coriander, turmeric, garam masala, red pepper flakes, and salt and stir to combine.
  5. Add the chicken and cook, stirring occasionally, until the chicken is cooked through, about 8 minutes.
  6. Add the coconut milk and water and bring to a boil.
  7. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  8. Serve with rice or naan bread.
