Ingredients
- 1 lb. boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 1 tablespoon ginger, minced
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/2 cup coconut milk
- 1/4 cup water
Directions
- Heat the oil in a large skillet over medium-high heat.
- Add the onion and sauté until softened, about 3 minutes.
- Add the ginger and garlic and sauté for another minute.
- Add the curry powder, cumin, coriander, turmeric, garam masala, red pepper flakes, and salt and stir to combine.
- Add the chicken and cook, stirring occasionally, until the chicken is cooked through, about 8 minutes.
- Add the coconut milk and water and bring to a boil.
- Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
- Serve with rice or naan bread.
