Ingredients

  • 1/2 cup diced cucumber
  • 1/4 cup diced red onion
  • 2 tablespoons freshly chopped cilantro
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 jalapeno pepper, seeded and finely diced (optional)

Directions

  1. In a medium bowl, combine the cucumber, red onion, cilantro, lime juice, salt, and black pepper.
  2. Stir to combine.
  3. Taste and adjust seasoning, if needed.
  4. Cover and refrigerate for at least 30 minutes before serving.
  5. Serve cold.
