Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup shredded cheddar cheese
  • 2 tablespoons grated Parmesan cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of water to a boil. Add cauliflower, reduce heat, and cook for 5 minutes or until tender. Drain and set aside.
  3. In a large saucepan, melt butter over medium heat. Stir in flour and cook, stirring constantly, for 1 minute or until bubbly.
  4. Gradually whisk in milk, garlic powder, salt, pepper, and nutmeg. Cook, stirring constantly, for 5 minutes or until thickened and bubbly.
  5. Remove from heat and stir in cheddar cheese. Add cooked cauliflower and stir until evenly coated.
  6. Pour mixture into a 9x13-inch baking dish and sprinkle with Parmesan cheese. Bake for 15 minutes or until cheese is melted and bubbly.
  7. Serve hot.
