Ingredients
- 1 cucumber, peeled and seeded
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lemon juice
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
Directions
- Place the cucumber, garlic, olive oil, mint, parsley, cilantro, lemon juice, salt, and pepper in a blender. Blend until smooth.
- Pour the soup into a bowl and chill for at least 30 minutes.
- Serve chilled, with a dollop of mint paste on top.
