Ingredients

  • 4 large potatoes, peeled and diced
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Vegetable oil for frying

Directions

  1. Place the diced potatoes in a large pot and cover them with cold water. Bring the water to a boil and cook the potatoes until they are tender, about 10-15 minutes. Drain the potatoes and transfer them to a bowl.
  2. Add the butter, milk, garlic powder, onion powder, dried thyme, dried parsley, grated Parmesan cheese, salt, and pepper to the bowl with the potatoes. Mash the potatoes and mix everything together until well combined.
  3. Take a spoonful of the potato mixture and shape it into a croquette. Repeat with the remaining mixture.
  4. Place the breadcrumbs in a shallow bowl and the beaten eggs in another bowl.
  5. Dip each croquette into the beaten eggs, then roll it in the breadcrumbs, making sure it is evenly coated.
  6. Heat vegetable oil in a large skillet over medium heat. Fry the croquettes in batches until they are golden brown and crispy, about 3-4 minutes per side.
  7. Remove the croquettes from the skillet and place them on a paper towel-lined plate to drain excess oil.
  8. Serve the potato croquettes hot with your favorite dipping sauce, such as tomato ketchup or garlic aioli. Enjoy!
