Ingredients

  • 1 block of firm tofu
  • 2 tablespoons olive oil
  • 1 onion, diced

  • 1 tablespoon Dijon mustard
  • 1 tablespoon paprika
  • 1 teaspoon thyme

Directions

  1. Start by pressing the tofu to remove excess water. Wrap the tofu block in a clean kitchen towel or paper towels. Place a heavy object, like a cutting board or a plate, on top of the wrapped tofu and let it sit for about 20 minutes. This will help remove the water from the tofu and make it firmer.
  2. While the tofu is being pressed, heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent and fragrant.
  3. Add the sliced mushrooms to the skillet and cook until they release their moisture and begin to brown. This will take about 5-7 minutes.
  4. While the mushrooms are cooking, unwrap the pressed tofu and cut it into small, bite-sized cubes. Add the tofu cubes to the skillet and gently stir to combine with the mushrooms.
  5. In a separate bowl, whisk together the coconut milk, soy sauce, Dijon mustard, paprika, thyme, salt, and pepper. Pour the mixture over the tofu and mushrooms in the skillet.
  6. Reduce the heat to low and let the stroganoff simmer for about 10-15 minutes, or until the tofu is heated through and the sauce has thickened slightly. Stir occasionally to prevent sticking.
  7. Taste and adjust the seasonings if needed. Add more salt, pepper, or paprika to suit your taste.
