Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 sweet potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and ginger and cook until the onion is softened, about 5 minutes.
  2. Add the sweet potatoes and cook for an additional 2 minutes, stirring to combine.
  3. Pour in the vegetable broth and bring to a boil. Reduce the heat to low and simmer for 15-20 minutes, until the sweet potatoes are tender.
  4. Using an immersion blender, blend the soup until it is smooth and creamy. Stir in the heavy cream and season with salt and pepper, to taste.
  5. Serve the soup hot with your favorite toppings.
