Ingredients

  • 1 lb fresh scallops
  • 4 slices bacon, diced
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • 2 potatoes, peeled and diced
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp butter
  • 2 tbsp flour
  • Fresh parsley for garnish

Directions

  1. In a large pot, cook bacon until crispy. Remove bacon and set aside.
  2. Add butter to the pot and sauté onion, celery, carrots, and garlic until softened.
  3. Stir in flour and cook for 1 minute.
  4. Gradually stir in broth, scraping up any browned bits from the bottom of the pot.
  5. Add potatoes, bay leaf, salt, and pepper. Simmer for 15 minutes until potatoes are tender.
  6. Add scallops and cook for 3-4 minutes until opaque.
  7. Stir in cream and let chowder simmer for another 5 minutes.
  8. Season with more salt and pepper if needed.
  9. Serve hot garnished with bacon and parsley.
