This creamy Pumpkin Potato Soup is the perfect autumn comfort food. Made with a combination of pumpkin, potatoes, and warm spices, this soup is rich, velvety, and bursting with flavors. It is easy to make and can be enjoyed as a cozy dinner or served as an appetizer at gatherings.

Ingredients

  • 2 cups pumpkin puree
  • 2 cups diced potatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped fresh parsley for garnish

Directions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until onion is translucent and garlic is fragrant.
  2. Add diced potatoes to the pot and cook for a few minutes, stirring occasionally.
  3. Stir in pumpkin puree, vegetable broth, cumin, cinnamon, nutmeg, salt, and pepper. Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes, or until potatoes are tender.
  4. Using an immersion blender or regular blender, blend the soup until smooth and creamy. Be careful while blending hot liquids.
  5. Return the soup to the pot and stir in the milk. Heat the soup over low heat until warmed through.
  6. Taste and adjust seasonings as needed. Add more salt, pepper, or spices according to your preference.
  7. Serve the Pumpkin Potato Soup hot, garnished with chopped fresh parsley. Enjoy!
