Ingredients

  • 1 lb kielbasa, sliced
  • 2 tbsp butter
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 4 cups potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Directions

  1. In a large pot or Dutch oven, cook the kielbasa slices over medium heat until browned. Remove the kielbasa from the pot and set aside.
  2. In the same pot, melt the butter over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent and the garlic is fragrant.
  3. Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender.
  4. Using a potato masher or the back of a spoon, smash some of the potatoes to thicken the soup. Leave some chunks for texture.
  5. Stir in the heavy cream and dried thyme. Season with salt and pepper to taste. Simmer for an additional 5 minutes to heat through.
  6. Serve the soup hot, garnished with chopped fresh parsley and the reserved browned kielbasa slices.
