Ingredients
- 1 lb kielbasa, sliced
- 2 tbsp butter
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 4 cups potatoes, peeled and diced
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Directions
- In a large pot or Dutch oven, cook the kielbasa slices over medium heat until browned. Remove the kielbasa from the pot and set aside.
- In the same pot, melt the butter over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent and the garlic is fragrant.
- Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender.
- Using a potato masher or the back of a spoon, smash some of the potatoes to thicken the soup. Leave some chunks for texture.
- Stir in the heavy cream and dried thyme. Season with salt and pepper to taste. Simmer for an additional 5 minutes to heat through.
- Serve the soup hot, garnished with chopped fresh parsley and the reserved browned kielbasa slices.
