Ingredients

  • 4 ears of fresh corn, kernels removed
  • 1 cup heavy cream
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter, melted

Directions

  1. Preheat your oven to 325 degrees F (165 degrees C).
  2. In a blender or food processor, blend together the corn kernels and heavy cream until smooth.
  3. In a large bowl, whisk together the eggs, flour, sugar, salt, black pepper, and cayenne pepper.
  4. Pour the corn mixture into the egg mixture and stir until well combined.
  5. Grease a 9-inch baking dish with butter and pour the corn custard mixture into it.
  6. Place the baking dish in a larger roasting pan and fill the pan with hot water, coming halfway up the sides of the baking dish. This will create a water bath for even cooking.
  7. Bake in the preheated oven for 30 minutes.
  8. Remove the dish from the water bath and sprinkle the Parmesan cheese evenly over the top.
  9. Return the dish to the oven and bake for an additional 10-15 minutes, or until the custard is set and golden brown on top.
  10. Remove the dish from the oven and let it cool for a few minutes before serving.
  11. Garnish with fresh herbs, if desired, and enjoy!
