Ingredients

  • 4 cups fresh or frozen corn kernels
  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish

Directions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.
  2. Add the diced potatoes and cook for another 5 minutes.
