Ingredients

  • 2 cups raisins
  • 1 cup dark rum
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)
  • Powdered sugar, for dusting (optional)

Directions

  1. In a small saucepan, combine the raisins and rum. Bring to a simmer over medium heat, then remove from heat and let the raisins soak in the rum for at least 1 hour. Drain the raisins and discard the excess rum.
  2. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing well after each addition.
  7. Stir in the vanilla extract and the drained raisins. If desired, fold in the chopped walnuts.
  8. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  9. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
  11. Once the cake is completely cooled, you can dust it with powdered sugar for an extra touch of sweetness, if desired.
  12. Slice and serve the delicious rum and raisin cake. Enjoy!
