Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups beef broth
  • 1 cup sour cream
  • 2 tbsp flour
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. In a large soup pot, sauté the beef in oil until browned. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Add mushrooms and cook until they release their juices.
  4. Stir in flour, tomato paste, Worcestershire sauce, paprika, salt, and pepper.
  5. Gradually stir in beef broth and bring to a simmer.
  6. Add the cooked beef back to the pot and simmer for 10-15 minutes.
  7. Stir in sour cream and cook for a few more minutes until heated through.
  8. Adjust seasonings as needed and serve hot, garnished with fresh parsley.
