Ingredients

  • 1 whole chicken, cut into serving pieces
  • 2 cans of coconut milk
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2-3 Thai chili peppers
  • 1 medium eggplant, sliced
  • 1 cup of spinach or kangkong (water spinach)
  • 2 tablespoons fish sauce
  • Salt and pepper to taste

Directions

  1. In a large pot, heat oil over medium heat and sauté garlic, ginger, and onion until fragrant.
  2. Add chicken pieces and cook until lightly browned on all sides.
  3. Pour in coconut milk and bring to a simmer. Add Thai chili peppers, fish sauce, salt, and pepper. Cover and cook for 20-25 minutes.
  4. Add eggplant slices and simmer for another 5 minutes until eggplant is cooked through.
  5. Stir in spinach or kangkong and cook for another 2-3 minutes until wilted. Adjust seasoning if needed.
  6. Serve hot with steamed rice and enjoy!
