Ginataang Manok is a traditional Filipino dish made with chicken simmered in creamy coconut milk with vegetables and spices. It is a comforting and hearty stew that is perfect for a cozy family dinner or special occasions.
Ingredients
- 1 whole chicken, cut into serving pieces
- 2 cans of coconut milk
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 thumb-sized ginger, sliced
- 2-3 Thai chili peppers
- 1 medium eggplant, sliced
- 1 cup of spinach or kangkong (water spinach)
- 2 tablespoons fish sauce
- Salt and pepper to taste
- 1 tablespoon cooking oil
Directions
- In a large pot, heat oil over medium heat and sauté garlic, ginger, and onion until fragrant.
- Add chicken pieces and cook until lightly browned on all sides.
- Pour in coconut milk and bring to a simmer. Add Thai chili peppers, fish sauce, salt, and pepper. Cover and cook for 20-25 minutes.
- Add eggplant slices and simmer for another 5 minutes until eggplant is cooked through.
- Stir in spinach or kangkong and cook for another 2-3 minutes until wilted. Adjust seasoning if needed.
- Serve hot with steamed rice and enjoy!
