Ingredients
- 1 whole chicken, cut into serving pieces
- 2 cans of coconut milk
- 1 onion, chopped

- 1 cup of spinach or kangkong (water spinach)
- 2 tablespoons fish sauce

Directions
- In a large pot, heat oil over medium heat and sauté garlic, ginger, and onion until fragrant.
- Add chicken pieces and cook until lightly browned on all sides.
- Pour in coconut milk and bring to a simmer. Add Thai chili peppers, fish sauce, salt, and pepper. Cover and cook for 20-25 minutes.
- Add eggplant slices and simmer for another 5 minutes until eggplant is cooked through.
- Stir in spinach or kangkong and cook for another 2-3 minutes until wilted. Adjust seasoning if needed.
