Ingredients

  • 12 lb whole turkey
  • 2 cups cornbread, crumbled
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chicken broth
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 325°F.
  2. In a large mixing bowl, combine the crumbled cornbread, diced onion, diced celery, minced garlic, dried cranberries, parsley, chicken broth, sage, thyme, salt, and pepper.
  3. Remove the giblets from the turkey and rinse the turkey inside and out. Pat dry with paper towels.
  4. Stuff the turkey cavity with the cornbread stuffing mixture. Secure the legs with kitchen twine and tuck the wings under the bird.
  5. Place the turkey on a roasting rack in a roasting pan. Tent loosely with foil.
  6. Roast the turkey for 2.5 to 3 hours, removing the foil in the last 30 minutes to brown the skin.
  7. The turkey is done when a meat thermometer inserted into the thickest part of the thigh reads 165°F.
  8. Let the turkey rest for 20 minutes before carving.
