Ingredients

  • 1 small pumpkin
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • 12 oz pasta of your choice
  • Grated Parmesan cheese, for garnish
  • Fresh parsley, chopped, for garnish

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the pumpkin in half and remove the seeds. Slice the pumpkin into smaller pieces.
  3. Place the pumpkin slices on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper to taste.
  4. Roast the pumpkin in the preheated oven for about 25-30 minutes or until it becomes tender and slightly caramelized.
  5. Remove the pumpkin from the oven and let it cool slightly. Once cooled, remove the skin and cut the flesh into cubes.
  6. In a large pot, heat the remaining olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  7. Add the roasted pumpkin cubes to the pot and stir well to combine with the onion and garlic.
  8. Pour in the vegetable broth and bring it to a simmer. Cook for 5-7 minutes to let the flavors meld together.
  9. Using a blender or immersion blender, puree the pumpkin mixture until smooth. Return the pureed mixture to the pot.
  10. Stir in the heavy cream and season with salt and pepper to taste. Simmer for another 5 minutes to heat through.
  11. Meanwhile, cook the pasta according to the package instructions. Drain the cooked pasta and add it to the pot with the pumpkin sauce. Toss well to coat the pasta with the sauce.
