Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 pound fettuccine pasta, cooked according to package instructions
- Fresh parsley, chopped (for garnish)
Directions
- Set the Instant Pot to sauté mode and heat the olive oil.
- Season the chicken breasts with salt and pepper, then add them to the Instant Pot. Cook until browned on both sides, about 3 minutes per side. Remove the chicken and set aside.
- Add the minced garlic to the Instant Pot and sauté for 1 minute.
- Pour in the chicken broth and scrape the bottom of the pot to deglaze it, removing any browned bits.
- Add the chicken back to the Instant Pot, along with the Italian seasoning. Close the lid and set the Instant Pot to pressure cook for 8 minutes.
- Once the cooking time is up, do a quick release of the pressure and carefully open the lid.
- Remove the chicken from the Instant Pot and shred it using two forks.
- Set the Instant Pot to sauté mode again and add the heavy cream and Parmesan cheese. Stir until the cheese is melted and the sauce is smooth and creamy.
- Add the shredded chicken back to the Instant Pot and stir to coat it with the sauce. Cook for an additional 2-3 minutes, until the chicken is heated through.
- Serve the chicken Alfredo over cooked fettuccine pasta, garnished with chopped fresh parsley.
