Made with fresh fish, potatoes, vegetables, and a savory broth, this chowder is a hearty meal on its own. The addition of cream adds richness to the soup, while the mix of herbs and spices adds flavor. Serve this fish chowder with crusty bread for a satisfying and soul-warming meal.

Ingredients

  • 1 lb white fish fillets, cut into bite-sized pieces
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, peeled and diced
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Fresh parsley, chopped (for garnish)

Directions

  1. In a large pot, melt the butter over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables soften, about 5 minutes.
  2. Add the potatoes, fish or vegetable broth, bay leaf, thyme, and dill to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes or until the potatoes are tender.
  3. Add the fish pieces to the pot and cook for another 5 minutes or until the fish is cooked through. Season with salt and pepper to taste.
  4. In a separate small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a paste. Gradually whisk in the heavy cream until smooth and thickened.
  5. Pour the cream mixture into the pot with the fish and vegetables. Stir to combine and let it simmer for an additional 5 minutes to allow the flavors to meld together.
  6. Remove the bay leaf from the chowder. Ladle the fish chowder into bowls and garnish with chopped fresh parsley.
  7. Serve the fish chowder hot with crusty bread for dipping. Enjoy!
