Ingredients

  • For the pasta:
  • - 2 cups all-purpose flour
  • - 3 large eggs
  • - 1/2 teaspoon salt
  • For the Alfredo sauce:
  • - 1/2 cup unsalted butter
  • - 2 cups heavy cream
  • - 2 cups grated Parmesan cheese
  • - Salt and pepper to taste
  • - Fresh parsley, chopped (for garnish)

Directions

  1. Start by making the pasta. In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into it. Whisk the eggs using a fork, gradually incorporating the flour until a dough forms.
  2. Transfer the dough to a floured surface and knead for about 5-10 minutes, until the dough becomes smooth and elastic. Wrap it in plastic wrap and let it rest for 30 minutes.
  3. After the resting time, divide the dough into 4 equal pieces. Take one piece and flatten it slightly with your hands. Using a pasta machine or a rolling pin, roll out the dough into a thin sheet. Repeat with the remaining dough.
  4. Cut the rolled-out dough into long, thin strips to create the fettuccine noodles. Set aside.
  5. In a large skillet, melt the butter over medium heat. Once melted, add the heavy cream and bring it to a gentle simmer. Cook for about 5 minutes, stirring occasionally.
  6. Gradually whisk in the grated Parmesan cheese until it melts and the sauce becomes creamy. Season with salt and pepper to taste. Remove from heat.
  7. Meanwhile, bring a large pot of salted water to a boil. Cook the fettuccine noodles for about 3-4 minutes or until al dente. Drain the pasta, reserving about 1/2 cup of the cooking water.
  8. Add the cooked fettuccine noodles to the skillet with the Alfredo sauce. Toss well to coat the noodles with the sauce. If needed, add some of the reserved cooking water to thin out the sauce.
  9. Serve the Fettuccine Alfredo hot, garnished with fresh parsley. Enjoy!
