Ingredients
- 1 cup wild rice
- 4 cups chicken broth
- 1 lb boneless, skinless chicken breast, diced
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup all-purpose flour
- 1 cup heavy cream
- 2 tbsp olive oil
Directions
- In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned on all sides. Remove from pot and set aside.
- In the same pot, add more olive oil if needed. Saute onion, carrots, celery, and garlic until onions are translucent.
- Add thyme, rosemary, salt, and pepper. Stir in flour and cook for 1-2 minutes.
- Add chicken broth and wild rice. Bring to a boil, then reduce heat and simmer for 30-40 minutes or until rice is tender.
- Stir in cooked chicken and heavy cream. Heat through and adjust seasoning if necessary.
- Serve hot with a sprinkle of fresh herbs on top.
