This Wild Rice Soup is a creamy and flavorful dish that is perfect for cold winter nights. Packed with vegetables, wild rice, and tender chicken, this soup is a meal in itself. The rich and hearty broth will warm you up from the inside out.

Ingredients

  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 lb boneless, skinless chicken breast, diced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 2 tbsp olive oil

Directions

  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned on all sides. Remove from pot and set aside.
  2. In the same pot, add more olive oil if needed. Saute onion, carrots, celery, and garlic until onions are translucent.
  3. Add thyme, rosemary, salt, and pepper. Stir in flour and cook for 1-2 minutes.
  4. Add chicken broth and wild rice. Bring to a boil, then reduce heat and simmer for 30-40 minutes or until rice is tender.
  5. Stir in cooked chicken and heavy cream. Heat through and adjust seasoning if necessary.
  6. Serve hot with a sprinkle of fresh herbs on top.
