Ingredients

  • 1 cup wild rice
  • 4 cups vegetable broth

  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups diced cooked chicken
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Directions

  1. Rinse the wild rice under cold water and drain well.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Sauté until the vegetables are tender, about 5 minutes.
  3. Add the wild rice, dried thyme, bay leaf, salt, and black pepper to the pot. Stir well to combine.
