This Potato and Pumpkin Gratin is a delicious twist on the classic potato gratin. Layers of thinly sliced potatoes and sweet pumpkin are smothered in a creamy cheese sauce and baked until bubbly and golden brown. It's the perfect side dish for a cozy dinner or holiday feast.

Ingredients

  • 2 pounds Yukon gold potatoes, peeled and thinly sliced
  • 1 small sugar pumpkin, peeled, seeded, and thinly sliced
  • 2 cups heavy cream
  • 2 cups shredded Gruyere cheese
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Directions

  1. Preheat oven to 375°F and grease a 9x13 inch baking dish.
  2. In a saucepan, heat the cream, garlic, salt, and pepper over medium heat until warmed through.
  3. Layer half of the potatoes and pumpkin in the baking dish, then pour half of the cream mixture over the top.
  4. Sprinkle half of the Gruyere and Parmesan cheese over the cream mixture.
  5. Repeat the layers with the remaining potatoes, pumpkin, cream mixture, and cheeses.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and bubbly.
  8. Garnish with fresh thyme leaves before serving.
