- 6 slices bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup water
- 4 large potatoes, peeled and diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 cup milk
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- Chopped green onions, for garnish

- In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove bacon from the pot and set aside.
