Ingredients
- 2 cups fresh gooseberries
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 1/4 teaspoon cinnamon
- 2 tablespoons cornstarch
- 1 recipe of your favorite pie crust
Directions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the fresh gooseberries, granulated sugar, lemon juice, cinnamon, and cornstarch. Mix well until the gooseberries are evenly coated.
- Roll out the pie crust and place it in the bottom of a 9-inch pie dish. Trim any excess dough.
- Pour the gooseberry mixture into the pie crust, spreading it evenly.
- Roll out the remaining dough and cut it into strips to create a lattice pattern on top of the pie. Alternatively, you can cover the pie with a full crust and cut slits to allow steam to escape.
- Press the edges of the crust together to seal and crimp them with your fingers.
- Bake the pie in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
- Remove the pie from the oven and let it cool for at least 30 minutes before serving.
- Serve the gooseberry pie warm with a scoop of vanilla ice cream or whipped cream on top.
