Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Dijon mustard
- 1 cup shredded Swiss cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 tablespoons melted butter
- Fresh parsley, for garnish
Directions
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
- Season the chicken breasts with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
- Pour in the chicken broth and bring to a simmer. Cook for 2 minutes, scraping any browned bits from the bottom of the skillet for extra flavor.
- Stir in the heavy cream and Dijon mustard. Continue to cook until the sauce has thickened slightly, about 5 minutes.
- Place the browned chicken breasts into the greased casserole dish. Pour the creamy sauce over the chicken.
- In a small bowl, mix together the shredded Swiss cheese, grated Parmesan cheese, breadcrumbs, and melted butter. Sprinkle this mixture evenly over the chicken and sauce in the casserole dish.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and golden brown.
- Garnish with fresh parsley and serve hot.
