Ingredients
- 2 lbs potatoes, peeled and thinly sliced
- 2 cups broccoli florets, blanched
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1/2 cup sour cream
- 2 tbsp butter
- 2 tbsp flour
- Salt and pepper to taste
- 1/2 cup breadcrumbs
Directions
- Preheat oven to 350°F and grease a baking dish.
- In a large saucepan, melt butter over medium heat. Add onions and garlic, sauté until translucent.
- Stir in flour and cook for 1-2 minutes until golden brown.
- Slowly whisk in milk, stirring constantly until smooth and thickened.
- Remove from heat and stir in sour cream, 1 cup of cheddar cheese, salt, and pepper.
- Layer half of the sliced potatoes in the bottom of the baking dish, top with half of the blanched broccoli, and pour half of the cheese sauce over.
- Repeat the layers with the remaining potatoes, broccoli, and cheese sauce.
- Top with the remaining 1 cup of cheddar cheese and breadcrumbs.
- Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
