This creamy and cheesy potato and broccoli casserole is a crowd-pleaser that combines tender potatoes and nutritious broccoli in a rich and flavorful sauce. It is the perfect side dish for any meal or a comforting main dish on its own.

Ingredients

  • 2 lbs potatoes, peeled and thinly sliced
  • 2 cups broccoli florets, blanched
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup sour cream
  • 2 tbsp butter
  • 2 tbsp flour
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs

Directions

  1. Preheat oven to 350°F and grease a baking dish.
  2. In a large saucepan, melt butter over medium heat. Add onions and garlic, sauté until translucent.
  3. Stir in flour and cook for 1-2 minutes until golden brown.
  4. Slowly whisk in milk, stirring constantly until smooth and thickened.
  5. Remove from heat and stir in sour cream, 1 cup of cheddar cheese, salt, and pepper.
  6. Layer half of the sliced potatoes in the bottom of the baking dish, top with half of the blanched broccoli, and pour half of the cheese sauce over.
  7. Repeat the layers with the remaining potatoes, broccoli, and cheese sauce.
  8. Top with the remaining 1 cup of cheddar cheese and breadcrumbs.
  9. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  10. Let it sit for a few minutes before serving. Enjoy!
