Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 cup uncooked white rice
  • 2 cups vegetable stock
  • 1 cup dried cranberries
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the onion and sauté until it is tender, about 3-4 minutes.
  3. Add the rice and stir to combine.
  4. Add the vegetable stock, cranberries, cinnamon, salt, and pepper and stir to combine.
  5. Bring to a boil, then reduce the heat to low and cover.
  6. Cook for 20 minutes, or until the rice is cooked through.
  7. Remove from heat and fluff with a fork before serving.
