Ingredients

  • 1 lb boneless, skinless chicken breast, cut into cubes
  • 1 cup long-grain white rice
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup sliced mushrooms
  • 1/2 cup diced cooked meat (ham, beef, or pork)
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth

Directions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the cubed chicken to the skillet and cook until lightly browned.
  3. Add the onion, bell peppers, mushrooms, meat, garlic, oregano, basil, salt, and pepper. Sauté for 3 minutes.
  4. Add the rice and chicken broth. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  6. Remove from heat and let stand for 5 minutes before serving.
