Ingredients
- 1/2 cup butter
- 1 cup light brown sugar
- 1/4 cup corn syrup
- 2 tablespoons cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 eggs
- 1 package refrigerated pie crust
- 1/2 cup raisins or currants
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium saucepan over medium heat, melt the butter. Add brown sugar, corn syrup, cream, vanilla, and salt. Stir until sugar is dissolved and mixture is smooth. Remove from heat.
- Beat eggs in a medium bowl. Gradually add hot syrup to eggs, stirring until blended. Set aside.
- Unroll one pie crust into the bottom of an ungreased 9-inch pie plate. Sprinkle evenly with raisins or currants. Pour in syrup mixture.
- Unroll the other pie crust and place on top. Pinch the edges together to seal. Cut a few slits in the top to allow steam to escape.
- Bake in preheated oven for 30 minutes, or until golden brown. Cool before serving.
