Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain Greek yogurt
  • 1/2 cup orange juice
  • 1/2 cup fresh cranberries
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped orange peel

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the melted butter, sugar, eggs, vanilla, yogurt, and orange juice until combined.
  4. Mix the wet ingredients into the dry ingredients until just combined. Fold in the cranberries, walnuts, and orange peel.
  5. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
