Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup butter, at room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon orange zest
  • 1/2 cup dried cranberries

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in orange zest.
  4. Gradually stir in flour mixture until just blended. Fold in cranberries.
  5. Divide dough in half, and shape each half into a log about 12 inches long. Place logs on the prepared baking sheet.
  6. Bake for 25 minutes in the preheated oven, or until golden brown. Remove from baking sheet to cool.
  7. When cool, cut each log diagonally into 1/2 inch slices. Place slices back onto the baking sheet.
  8. Bake for 10 minutes, then turn slices over and bake for an additional 10 minutes. Cool completely.
