Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 cup butter, at room temperature
- 1 cup sugar
- 2 large eggs
- 1 teaspoon orange zest
- 1/2 cup dried cranberries
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in orange zest.
- Gradually stir in flour mixture until just blended. Fold in cranberries.
- Divide dough in half, and shape each half into a log about 12 inches long. Place logs on the prepared baking sheet.
- Bake for 25 minutes in the preheated oven, or until golden brown. Remove from baking sheet to cool.
- When cool, cut each log diagonally into 1/2 inch slices. Place slices back onto the baking sheet.
- Bake for 10 minutes, then turn slices over and bake for an additional 10 minutes. Cool completely.
