Ingredients
- 6 corn tortillas
- 3 eggs
- 1 cup shredded cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup diced jalapeno
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Directions
- Preheat oven to 375 degrees.
- Spray a 9-inch pie plate with cooking spray.
- Cut the tortillas into thin strips and arrange them in a single layer in the bottom of the pie plate.
- In a medium bowl, whisk together the eggs, cheese, onion, bell pepper, jalapeno, tomatoes, cilantro, garlic powder, chili powder, salt and pepper.
- Pour the egg mixture over the tortillas in the pie plate.
- Bake for 25-30 minutes or until the eggs are set and the top is golden brown.
- Let cool for 10 minutes before serving.
