Garlic Corn on the Cob
Ingredients
6 corn tortillas
3 eggs
1 cup shredded cheese
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 cup diced jalapeno
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
Salt and pepper to taste
Directions
Preheat oven to 375 degrees.
Spray a 9-inch pie plate with cooking spray.
Cut the tortillas into thin strips and arrange them in a single layer in the bottom of the pie plate.
In a medium bowl, whisk together the eggs, cheese, onion, bell pepper, jalapeno, tomatoes, cilantro, garlic powder, chili powder, salt and pepper.
Pour the egg mixture over the tortillas in the pie plate.
Bake for 25-30 minutes or until the eggs are set and the top is golden brown.
Let cool for 10 minutes before serving.
