Ingredients

  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups milk
  • 2 cups frozen corn
  • 1/2 cup heavy cream

Directions

  1. Preheat oven to 375°F. Grease a 2-quart baking dish with butter.
  2. In a large skillet over medium heat, melt butter. Add onion and cook until softened, about 5 minutes.
  3. Stir in flour, salt, and pepper. Cook for 1 minute.
  4. Slowly add milk, whisking constantly to avoid lumps. Simmer over low heat until thickened, about 5 minutes.
  5. Stir in corn and cream. Pour mixture into prepared baking dish.
  6. Bake for 20 minutes, or until golden brown and bubbly.
