  • 2 cups arugula, washed

Directions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Season the chicken pieces with salt, pepper, and paprika.
  3. Place the chicken in the pot, skin side down, and cook until browned and crispy, approximately 5 minutes per side. Remove the chicken from the pot and set aside.
  4. In the same pot, add the diced onion and garlic. Sauté until the onion becomes translucent, about 5 minutes.
  5. Add the dried thyme and stir to combine.
  6. Pour in the diced tomatoes with their juice and the rinsed cannellini beans. Stir well.
  7. Return the chicken to the pot, along with any accumulated juices.

  9. Bring the stew to a boil, then reduce the heat to low and cover. Simmer for 30 minutes, stirring occasionally.
  10. After 30 minutes, remove the lid and add the arugula. Stir until it wilts into the stew.
