Colorful and Delicious Stained Glass Cookies Recipe

Ingredients

• 2 1/4 cups all-purpose flour
• 1/2 teaspoon baking powder
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• Assorted hard candies (e.g. Jolly Ranchers) in different colors

Directions

1. Preheat the oven to 350°F and line baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour and baking powder. Set aside.
3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
5. Meanwhile, separate the hard candies by color and crush them into small pieces using a food processor or a hammer wrapped in a towel.
6. Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes from the dough, then use smaller cookie cutters to cut out centers from each cookie.
7. Place the cookies on the prepared baking sheets and fill the cut-out centers with crushed candy pieces, mixing colors as desired.
8. Bake the cookies for 8-10 minutes, or until the candy has melted and the cookies are lightly golden around the edges.
9. Let the cookies cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely and harden the candy centers.
