Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 cups cooked white beans
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon sea salt
  • 2 cups vegetable broth
  • 1 bunch collard greens, stems removed and leaves chopped

Directions

  1. In a large pot, heat olive oil over medium heat. Add garlic and onion and cook until onion is softened, about 5 minutes.
  2. Add cooked beans, oregano, paprika, red pepper flakes, cumin, black pepper, and salt. Stir to combine.
  3. Add vegetable broth and collard greens. Bring to a boil, then reduce heat to low and simmer for 25 minutes.
  4. Serve hot with your favorite sides.
