Ingredients
- 1/4 cup olive oil
- 1/2 onion, finely chopped
- 1 garlic clove, minced
- 1/2 red bell pepper, diced
- 1/2 zucchini, diced
- 1/2 yellow squash, diced
- 1/2 cup frozen corn kernels
- 1/2 cup canned black beans, drained and rinsed
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese
- 1/2 cup crushed tortilla chips
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until the onion is softened, about 5 minutes. Add the bell pepper, zucchini, squash, corn, and black beans and cook, stirring, until the vegetables are tender, about 5 minutes more.
- Stir in the chili powder, cumin, oregano, salt, and pepper. Remove from the heat and let cool for a few minutes.
- Spread the vegetable mixture in the prepared pan. Sprinkle with the cheese and crushed tortilla chips. Bake for 15 minutes, until the cheese is melted and bubbly.
- Cut into squares and serve warm or at room temperature.
