Ingredients

  • 1/4 cup olive oil
  • 1/2 onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 red bell pepper, diced
  • 1/2 zucchini, diced
  • 1/2 yellow squash, diced
  • 1/2 cup frozen corn kernels
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese
  • 1/2 cup crushed tortilla chips

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until the onion is softened, about 5 minutes. Add the bell pepper, zucchini, squash, corn, and black beans and cook, stirring, until the vegetables are tender, about 5 minutes more.
  3. Stir in the chili powder, cumin, oregano, salt, and pepper. Remove from the heat and let cool for a few minutes.
  4. Spread the vegetable mixture in the prepared pan. Sprinkle with the cheese and crushed tortilla chips. Bake for 15 minutes, until the cheese is melted and bubbly.
  5. Cut into squares and serve warm or at room temperature.
