Ingredients
- 1/2 cup of all-purpose flour
- 2 tablespoons of sugar
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 cup of coconut milk
- 2 tablespoons of melted butter
- 1 teaspoon of vanilla extract
- 1/4 cup of shredded sweetened coconut
Directions
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the coconut milk, melted butter, and vanilla extract.
- Slowly add the wet ingredients to the dry ingredients and whisk until the batter is smooth.
- Stir in the shredded coconut.
- Heat a greased skillet over medium-high heat and pour 1/4 cup of batter into the skillet.
- Tilt the skillet so that the batter evenly coats the bottom of the pan.
- Cook each crepe until golden brown and then flip and cook the other side.
- Repeat with the remaining batter.
