Ingredients

  • 1/2 cup of all-purpose flour
  • 2 tablespoons of sugar
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 cup of coconut milk
  • 2 tablespoons of melted butter
  • 1 teaspoon of vanilla extract
  • 1/4 cup of shredded sweetened coconut

Directions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the coconut milk, melted butter, and vanilla extract.
  3. Slowly add the wet ingredients to the dry ingredients and whisk until the batter is smooth.
  4. Stir in the shredded coconut.
  5. Heat a greased skillet over medium-high heat and pour 1/4 cup of batter into the skillet.
  6. Tilt the skillet so that the batter evenly coats the bottom of the pan.
  7. Cook each crepe until golden brown and then flip and cook the other side.
  8. Repeat with the remaining batter.
  9. Serve and enjoy!
