Ingredients

  • 4 flounder fillets
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 3 cups spinach, chopped
  • 2/3 cup half and half
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 350 degrees F.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, oregano, and thyme and cook for 1 minute more.
  3. Add spinach and cook until wilted, about 2 minutes. Add half and half and bring to a simmer. Simmer until the liquid is reduced by half, about 3 minutes.
  4. Stir in Parmesan cheese and season with salt and pepper. Remove from heat.
  5. Arrange flounder fillets in a greased baking dish. Top with the spinach mixture and spread evenly over the fish.
  6. Bake in preheated oven until the fish is cooked through, about 10-15 minutes.
  7. Serve hot.
