Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons Thai red curry paste
  • 1 can (13.5 ounce) coconut milk
  • 1 can (14.5 ounce) chicken broth
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup sliced mushrooms
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
  3. Add the ginger and curry paste and cook for 1-2 minutes, stirring frequently.
  4. Add the coconut milk and chicken broth and bring to a simmer.
  5. Add the chicken and mushrooms and cook for 5-7 minutes, stirring occasionally.
  6. Add the fish sauce, lime juice, cilantro, salt and pepper and cook for 2-3 minutes, stirring occasionally.
  7. Serve hot and enjoy!
