Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 tablespoons fresh ginger, grated
2 tablespoons Thai red curry paste
1 can (13.5 ounce) coconut milk
1 can (14.5 ounce) chicken broth
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
1/2 cup sliced mushrooms
1 tablespoon fish sauce
1 tablespoon lime juice

Salt and pepper to taste
Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
Add the ginger and curry paste and cook for 1-2 minutes, stirring frequently.
Add the coconut milk and chicken broth and bring to a simmer.
Add the chicken and mushrooms and cook for 5-7 minutes, stirring occasionally.
Add the fish sauce, lime juice, cilantro, salt and pepper and cook for 2-3 minutes, stirring occasionally.
Serve hot and enjoy!
