Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 2 tablespoons Thai red curry paste
- 1 can (13.5 ounce) coconut milk
- 1 can (14.5 ounce) chicken broth
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup sliced mushrooms
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1/2 cup fresh cilantro, chopped
- Salt and pepper to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
- Add the ginger and curry paste and cook for 1-2 minutes, stirring frequently.
- Add the coconut milk and chicken broth and bring to a simmer.
- Add the chicken and mushrooms and cook for 5-7 minutes, stirring occasionally.
- Add the fish sauce, lime juice, cilantro, salt and pepper and cook for 2-3 minutes, stirring occasionally.
- Serve hot and enjoy!
